New Year's Eve Dinner!

This holiday season has been so busy, that I just wanted to relax on New Year’s Eve. I decided to make a great dinner because I hadn’t cooked since Christmas. While scrolling through Facebook, I came across a Delish recipe for Crab mac and cheese. It seemed very easy to make. I went out and bought the ingredients and recreated a meal that I had at one of my favorite restaurants in the area called Whitlows. They serve blackened salmon with crab mac and cheese and broccoli. Instead of broccoli, I had asparagus in the fridge.

The mac and cheese started with boiling the elbow pasta and making a quick white sauce. I added a good amount of mozzarella and sharp cheddar cheese to the sauce to flavor and thicken it. I created layers of sauce, noodles, crab and cheese until I finished with the remaining cheese and parsley and baked it for 20 minutes. Next I tossed the asparagus with olive oil and salt free seasoning and put it in the oven with the mac and cheese. Finally, I seasoned the salmon with smoked sea salt, garlic pepper and Lawry’s salt free seasoning that includes various dried herbs. I patted the salmon dry and rubbed the spices on both side of the fish and pan seared in a cat iron skillet. After it was seared, it went into the oven after the other dishes came out to cook through.

My meal was great. The leftovers are even good for other dishes. This morning I used the leftover salmon to put over a salad for breakfast. Everything tasted great and I can’t wait to make it again.
