Thai Pineapple Fried Rice!

New Year, better health decisions! I am working on making better food decisions for myself. This included taking Meatless Mondays seriously. It’s only one day a week and it won’t hurt. Last night, I was trying to figure out something different, flavorful and fulfilling for dinner. I stumbled upon a recipe for Thai Pineapple Fried Rice. You can also add shrimp and shredded dried pork to the recipe if you would like to include meat.
I picked up the ingredients from the grocery store that included a pineapple, bell peppers, carrots, cashews, fish sauce and green onions. The directions said to use chilled cooked rice because hot rice makes your fried rice sticky. I cooked the rice, strained it and put it in the freezer for a quick chill. Next I prepped the veggies and made a sauce from fresh ginger, soy sauce and fish sauce. After the rice chilled, I sautéed the veggies together until they begin to soften and added the rice and sauce mixture. Lastly the pineapple went in and I garnished with fresh cilantro and a lime slice. I hollowed out half of the pineapple for plating and served from the shell.
One of my friends, Angel from The Spice Suite in DC, posted a quick recipe for Asian inspired cabbage. I sautéed shredded cabbage with sesame oil, rice wine vinegar, fresh ginger, ginger root and her Korean black garlic spice. Such a quick and delicious side dish for my rice. All in all, Meatless Monday was a success this week. I can’t wait to see what new Meatless recipes I can find!
