Mango Sorbet!


It's finally mango season and I couldn't be happier. Last week, Whole Foods Market was selling Champagne mangoes for a dollar each or a case for $12.99. After getting individual mangoes, I splurged and purchased a whole case. I even got a 10% discount for buying a case of a good.

Fast forward to having the mangoes for almost a week. Even though they are a little wrinkled, they taste like tropical candy when peeled. However, I knew I wouldn't be able to eat them all before they went bad; I went to Pinterest to find simple recipes to use over ripe mangoes. I came across a super simple 2 ingredient recipe for mango sorbet.

I had 9 mangoes left and started to peel and cut them up. After they were sliced, I put them into the food processor with a squeeze of fresh lemon, and blended the mixture down to a puree. I put it into a glass Pyrex container with a lid and placed it in the freezer. If I had an ice cream machine, it could go in there. We all know I don't need another small kitchen appliance, so I went old school. Every 15-20 minutes, I have been stirring the mixture as it begins to freeze and become sorbet.

I can't wait to taste the frozen treat so I can enjoy the taste of tropical candy for a few more days!
