If you are in my inner circle, you know that I will always choose savory over sweet. However, this evening after my great Sunday dinner, I had a sweet tooth. One of the easiest desserts for me to make is lemon bars. I made them a few years ago and keep it for times such as this.
This super easy recipe consists of only five ingredients which can be found in your pantry. I used my Ninja food processor to make the shortbread base. I mixed flour, sugar and cold butter and mixed it on the Dough setting. I greased a glass dish and pressed the dough into the bottom and baked it for 20 minutes. While it baked, I whisked together eggs, lemon zest, lemon juice, flour and sugar and poured it over the shortbread. It went back in the oven for about 30 minutes until the mixture is solid. I let it cool and shook powder sugar over the top. Super easy and super quick.
