Yellow Cake Mix Desserts!


Disclaimer... I am not a baker and hate it because ingredients have to be measured. There is an exact science behind it and I don't feel like I can be as creative to throw a little or this and that to create my own magic. Too much flour or not enough baking powder can end in failure.

Thankfully, there is cake mix when dessert is needed. However, I don't want to just bake a normal yellow cake with chocolate icing, but rather transform dessert into something special without breaking out the standing mixer and measuring spoons. My boyfriend and his son visit for weekly dinners and quality time. Each meal ends with a dessert, which can be a challenge. Also add that his son is allergic to nuts to the mix. This particular night, I didn't have time to run to the grocery store and had to use what was in my pantry. Pinterest is my favorite website of all time because of the plethora of knowledge. I searched for easy dessert using yellow cake mix and stumbled upon lazy cookie bars. It is essentially a giant chocolate chip cookie that can be cut into bars. Perfect!

You should know that I love anything that can be made in a cast iron skillet, so I thought this would be ideal. I mixed the eggs and melted butter with the dry cake mix together. Then stirred in the chocolate chips. Dropped it all in the cast iron skillet and baked on 350 for about 30 minutes. It came out delicious. I topped it with whipped cream and Jason loved it! Score!

Another evening I was looking for a fruity dessert. Peach dump cake only has 4 ingredients that can be found at Aldi's Food Market and averages less than $5.00. Plus it is super simple and smells great while baking in the oven. Dump two cans of peach slices with syrup in your baking dish and spread evenly. Top the peaches with the dry cake mix and cut a stick of butter into slices. Place the slices on top of the mix and sprinkle with cinnamon. Pop it if the oven for about 30 minutes. It has become a regular dessert in my household and is often eaten for breakfast. The dessert was so yummy, I didn't have a chance to take a picture of it!
